La Comunicación del riesgo alimentario = Communication of health risks
Abstract
Resumen: Las crisis alimentarias acaecidas en Europa demostraron que no sabíamos tanto sobre una serie de riesgos potenciales o presentes en los alimentos. Cuanto más avanzábamos en las crisis, más conscientes éramos de nuestras limitaciones y de la falta de respuestas basadas en la ciencia. Esa falta constatada de conocimiento sobre la etiología de algunos peligros alimentarios emergentes fue en sí misma, una de las lecciones aprendidas en esas crisis alimentarias. Desde ese momento cualquier decisión de seguridad alimentaria debe basarse en el análisis de riesgo, bajo la triple consideración de la evaluación, gestión y comunicación de riesgos, como herramienta más adecuada para promover los mayores niveles de protección y confianza de los consumidores.

Abstract: The food crises in Europe showed that we do not know much about a number of potential or present risks in food. The more advanced in the crisis, we were more aware of our limitations and the lack of answers based on science. That lack proven knowledge on the etiology of some emerging food hazards was itself one of the lessons learned from these food crises. Since then any decision must be based on food safety risk analysis, under the triple consideration of the assessment, management and communication of risks, as most appropriate tool to promote the highest levels of protection and consumer confidence.
